Lamda – Assyrtiko

Lamda – Assyrtiko is a refined dry white wine, crafted exclusively from the emblematic Greek variety Assyrtiko and aged to reveal the full expressive power of this noble grape. The winemaking begins with 24 hours of skin contact at low temperature, a process that enhances aromatic complexity and structure. Fermentation and maturation follow in first-use oak barrels, where the wine rests on its fine lees for six months. A complete malolactic fermentation adds further depth, softening the acidity and creating a richer, more rounded texture.

In the glass, this wine presents a luminous golden color. Its aromatic profile is layered and elegant, with notes of citrus zest, green apple, and herbal nuances intertwined with subtle hints of honey, vanilla, and roasted chestnut—an aromatic signature of its careful oak aging. On the palate, Lamda reveals a buttery, full-bodied texture, with a pronounced sense of minerality and creamy persistence that lingers. The six months spent on fine lees in barrel lend it finesse, volume, and length.

Best served chilled at 10–12°C, Lamda is a perfect match for dishes based on white meats, fish, or seafood prepared with butter or cream-based sauces. It also pairs exceptionally well with mushroom-based recipes or pasta in white sauces, where the wine’s weight and balance shine alongside savory richness.
